Andrew Commons Recipe

Bon Appétit Macaroni and Cheese Recipe for One

Ingredients:

  • ½ cup pasta of your choice (macaroni or cavatappi work well)
  • 1 tablespoon salted butter
  • 1 tablespoon all-purpose flour
  • ½ cup whole milk
  • ½ cup shredded sharp cheddar cheese
  • Salt and pepper to taste
  • Pinch of cayenne pepper

Directions:

  1. Bring a small pot of salted water to boil over high heat.
  2. Cook pasta according to directions on package.
  3. While the pasta cooks, in a small saucepan, melt butter over medium heat.  Whisk in flour and cook until a thick paste forms.  Slowly whisk in milk, whisking out any lumps.  Whisk continuously until mixture thickens.
  4. Remove from heat and stir in cheese until melted.  Add salt and pepper to taste.  Add cayenne if you like.
  5. Drain pasta and mix into cheese sauce.
  6. Enjoy!
